Incredible no-churn icecream

This incredibly simple and delightfully delicious no-churn ice cream recipe became a summer staple for us. It was the perfect way to showcase the abundance of summer fruits. During Christmas dinner, my mother wowed everyone with her impressive three-layer version, with separate tiers of almond, chocolate, and vanilla . It was one of the many highlights of the meal.

Blackberry + Elderberry Variation

One of my all-time favorite versions of this ice cream is the autumn variation. After a refreshing swim in the sun, we would pick juicy wild blackberries from the river and gather ripe elderberries from the farm. Since elderberries require thorough cooking, I combined the blackberries and elderberries (feel free to adjust the quantities as desired) with a generous spoonful of honey and a splash of water in a saucepan. I simmered the mixture slowly for approximately 20 minutes, stirring occasionally and adding more water if it became too thick. Finally, I swirled this syrup into the ice cream at the end, creating a beautiful ripple effect. Elderberry medicine + Ice-cream #health xo
